I've beaten both and can gladly say that death mode is way easier. Definetely death mode is easier. Eternity has extra items though. Eternity is both harder, and grindier. Also it doesn't effect calamity bosses as its not made for calamity. Fargo's souls is a separate content mod that does not mix well. Death Mode is the second gamemode introduced in the Calamity Mod, serving as an increased difficulty level to Revengeance Mode.
